Genesis integrated crusher-kneading system

Crushing is the fundamental phase of the extraction process in which the olives are crushed in order to obtain an olive paste. The crushing technology, the speed exerted and the temperature are important factors that affect the quality of the olive paste, influencing the kneading phase. This is the reason why we always talk about a crusher-kneading phase as the two phases are closely connected and interconnected. Too violent crushing can cause the olive paste to overheat resulting in loss or decrease of volatile compounds (important for the scent of the oil).

Our Genesis crusher-kneading systems use integrated technology equipped with knife-based crushing parts, designed for effective but delicate olives' crushing. They have a temperature control system that allows the conditioning of the paste already inside the crushing chamber.

Controlled kneading to maximize yield and quality

Kneading is the stage in which the olive paste is mixed to favour the separation of the oil from the water and solids to then generate coalescence. The determining factors at this stage are the duration, the processing temperature and the mixing speed.

Optimal kneading respects not too long times, so as not to increase oxidation to the detriment of oil quality. It must keep a temperature that preserves aromas and takes place in a controlled atmosphere. Too strong mixing speed could break the emulsions and compromise the quality of the final product sent to the decanter. A delicate kneading enhances fruity aromas, while an aggressive one can lead to oxidized or very bitter notes.

Optimizing crushing and kneading is essential to obtain a balanced extra virgin oil, rich in aromas and with a high concentration of polyphenols.

Genesis vats: flexibility and modularity

The vats of Genesis kneading systems are made entirely of stainless steel to guarantee high standards of hygiene and durability over time. The gap for the circulation of heating water, also made of stainless steel, ensures efficient thermal control of the paste. 

The system allows to adjust the water temperature directly from the controll panel and a different kneading temperature for each individual vat is also adjustable. This is essential to optimize the kneading process based on the characteristics of the olives and on the type of oil you want to obtain. The inner circular shape guarantees complete cleaning.
