OMT Company
Who is OMT, Officine Meccaniche Toscane?
OMT, Officine Meccaniche Toscane S.p.A. is an Italian company specialising in the design and manufacture of complete, continuous-cycle systems for transforming olives into oil. It is based in Bagno a Ripoli (Florence) and produces in-house its machines, decanters, crushers, malaxers, washing machines, filters and control electrical panels.
How long has OMT been operating in the olive oil systems sector?
OMT has over 85 years of experience in building systems for transforming the olive product into oil. Its main output has always been complete machines and systems for extracting oil from olives.
Where is OMT based and where are its production facilities?
OMT is based in Bagno a Ripoli, in the province of Florence. Its production facilities cover 6,300 sq m of indoor space, of which 750 sq m are used as offices. Production, assembly and testing are all carried out in-house.
Are OMT machines made in Italy?
Yes. All OMT systems are designed and built in-house, at the facilities in Bagno a Ripoli (Florence). Mechanical steelwork, laser cutting, bending and rolling are used to build crushers, malaxers and washing machines; lathes, milling machines and balancing equipment handle the precision machining required to build the centrifuges; and the entire electrical section, including control panels, is assembled on site. This ensures flexibility in meeting customisation requests and the ability to provide direct support on OMT's own spare parts.
Does OMT support the customer even after the system has been supplied?
Yes. The OMT back office is made up of a multilingual team that supports the customer throughout the entire journey: choosing the most suitable system, design, installation, staff training and scheduled maintenance. Its customers are spread all over the world (from the Mediterranean Basin to Australia, Peru and Chile) and support can also be reached through social media channels for quick requests.
In which countries are OMT systems installed?
In addition to the whole of Italy (from Sicily to Veneto), OMT has installations throughout the Mediterranean Basin: Morocco, Tunisia, Algeria, Turkey, Syria, Iran, Lebanon, Greece, Spain and Portugal. OMT systems are also present in Australia, New Zealand, Chile, South Africa, Mexico and California.

Range and solutions
What types of systems does OMT produce?
OMT offers a complete range of continuous-cycle systems for olive oil production, structured around six solutions: Pegaso 250 (250 kg/h), Pegaso 500 (500 kg/h) and Pegaso 1000 (1,000 kg/h) for farms and small-scale contract processing; and complete systems with Euro X15 DE (1,500 kg/h), Euro 2.0 EVOO (2,000 kg/h) and Euro X30 (3,000 kg/h) decanters for contract-processing operations.
What is the difference between a system for a farm and one for contract processing?
The Pegaso 250 and 500 systems are designed for small farms; Pegaso 1000 is the borderline solution, suitable both for farms and for small-scale contract processing. The complete systems with Euro decanters (X15 DE, 2.0 EVOO, X30) are dedicated to contract processing and to operations handling larger volumes, with capacities from 1,500 to 3,000 kg/h.
Are the larger solutions modular?
Yes. The three largest system solutions (Euro X15 DE, Euro 2.0 EVOO, Euro X30) are modular both in the malaxing and in the crushing stages, with various configurations offered by OMT according to the customer's processing needs, budget and logistical constraints.
Which stages of the process do OMT systems cover?
OMT systems cover every stage of processing: defoliation and washing of the olives, crushing, malaxing, centrifugal extraction (decanter), final separation where applicable, and final clarification/filtering. They can be combined with accessories for disposing of pomace, leaves, olive stones and vegetation water.
Are OMT system solutions standard or customisable?
OMT solutions are designed to adapt to the specific needs of each customer. The olive is a fruit that varies all over the world, cultivar, size, ripeness, harvest times, and for this reason OMT machines are modular and configurable: hourly capacity, number of malaxers, type of crusher, presence of a dynamic filter, level of the VM 4.0 electrical panel. This tailor-made approach is one of OMT's distinctive features.
Technology and process
What is a decanter and what is it for in the olive oil process?
The decanter is the horizontal-axis centrifugal extractor that separates the oil from the pomace and, in three-phase systems, also from the vegetation water. It works by centrifugation and is the heart of the extraction process: the quality of the decanter directly affects the yield, the purity and the organoleptic characteristics of the oil.
What is a crusher and what types does OMT produce?
The crusher is the machine that reduces the olives to a paste, before malaxing. OMT produces blade, hammer and roller crushers, to be matched with its farm and contract-processing systems. Its flagship model is the SFR/A, a vertical-axis thermo-conditioning blade crusher.
What is malaxing?
Malaxing is the stage in which the already-crushed olive paste is slowly mixed to encourage the oil droplets to merge (coalescence) before extraction in the decanter. Together with crushing, it is the stage in which the product begins to take shape in terms of its chemical and organoleptic profile and its volatile components.
What is the TBD, Twin Bowl Decanter, system?
TBD is OMT's patented twin-bowl decanter. The paste travels along the entire length of the main bowl, increasing the residence time, then enters a second, smaller-diameter bowl located at the centre: the oily must travels back through the central bowl, making it possible to remove mucilage and suspended solids, while the central bowl separates the paste-inlet area from the area where the clarified oil is drawn off. It works with a full bowl, in the absence of oxygen, and in two phases without adding water. The result is a long internal clarification path and effective extraction, with a final oil of the very highest quality.
What is the GENESIS integrated crushing-malaxing system?
GENESIS is OMT's integrated crushing and malaxing system, made up of the SFR/A thermo-conditioning blade crusher and the modular GENESIS malaxer unit with circular tanks. The two machines work in an integrated way to maximise the efficiency and quality of the product. The SFR/A crusher uses a vertical rotation axis and crushing elements that turn horizontally, with a grid that works horizontally: a geometry different from that of all competitor crushers, which makes it possible to obtain pastes that are barely emulsified, only slightly heated and with excellent preservation of the volatile aromatic components. The modular malaxer system is available with 2 to 6 tanks of about 500 or 700 kg.
What is the SFR/A crusher?
SFR/A is OMT's new-generation vertical-axis thermo-conditioning blade crusher. Distinctive features: a higher grid diameter/height ratio with an 'open geometry' to improve pulp reduction without pulverising the stone and kernel; an excellent capacity/kW ratio (3:1, up to 45 quintals/h with 15 kW/h); and a cylindrical crushing chamber that can also be used as a pre-malaxer.
What is the OMT dynamic filter and why does it replace the vertical separator?
The dynamic filter is OMT's new filtering system for clarifying the oil leaving the decanters, replacing the classic vertical-axis centrifugal separators. It was introduced to eliminate two typical drawbacks of the vertical separator: the heating of the product (which has a negative effect on peroxide levels) and prolonged contact with water (which reduces the polyphenol content). The dynamic filter works at low speed, without adding or coming into contact with water, and includes an innovative cleaning system. It requires no masonry drains.
How important is the crushing stage for the final quality of the oil?
The crushing stage is one of the most delicate of the whole process: it is here that many variables come into play which, if managed differently, produce different results in the final product, especially in terms of its organoleptic profile. For this reason OMT regards the crusher as a modular tool, on which the miller can act, on the basis of their own knowledge and experience, to obtain a different oil according to the quality objective.
What makes the OMT crusher different from horizontal-axis crushers?
The SFR/A crusher, and the GENESIS system in general, uses a vertical rotation axis: the crushing parts turn horizontally and the grid works horizontally, offering a 360° useful surface. This different geometry, not used by the main competitors, allows the olive paste to leave the grid naturally, significantly reducing the emulsion effect and the rise in temperature compared with crushers in the same capacity range. The result is better preservation of the volatile component, and therefore of the aromas.
Why does OMT integrate crushing and malaxing into a single system?
Crushing and malaxing are two closely linked stages of the process. Having a crusher that emulsifies the paste very little, heats it very little and can pre-condition it inside the crushing chamber makes it possible to start the malaxing stage right there, easing the work of the malaxer that follows. The result is a combined improvement of the whole crushing-malaxing stage, in terms of both the quality and the quantity of the final product.
How are OMT systems designed from the operator's point of view?
Two parallel objectives guide the design of OMT machines: innovating to improve product quality and ensuring that the machine is easy for the mill operator to use. A practical example is ease of cleaning: a machine that is easy to clean, within an olive oil system, is a key feature for easing the miller's work and, at the same time, for pursuing the goal of final oil quality.
What is the difference between a 2-phase and a 3-phase decanter?
A three-phase decanter separates oil, vegetation water and pomace, but uses mixing water that dilutes the polyphenols. A two-phase decanter (such as the OMT Euro and Pegaso series) separates only oil and wet pomace, reducing or eliminating added water, shortening the process, keeping the product cooler and raising the polyphenol content. It is the standard choice in the new OMT series.
What does 'working with a full bowl' mean?
Working with a full bowl means that, during extraction, the internal volume of the decanter bowl stays saturated with product, with no air gaps. This drastically reduces the oil's contact with oxygen during extraction, helping to keep peroxide values low and to preserve the product's organoleptic characteristics intact. It is a feature of the TBD system.
What are polyphenols and why do they matter when choosing a system?
Polyphenols are antioxidant compounds naturally present in extra virgin olive oil. They are responsible for the product's stability over time and for much of its organoleptic and nutritional characteristics. Comparing OMT two-phase decanters (e.g. Euro 2.0 EVOO) with similar three-phase decanters, for the same olives processed the polyphenol content tends to double and the peroxide level tends to halve.
OMT Innovations
What are the main process innovations introduced by OMT?
OMT has introduced three main innovations in the continuous-cycle process: (1) elimination of the final vertical-axis centrifugal separator, including in the new two-phase decanter series; (2) an integrated crushing-malaxing system made up of the SFR/A crusher and the modular GENESIS malaxer unit; (3) a dynamic filtering system replacing the traditional final separators.
How long has OMT been working on eliminating the vertical separator and on two-phase decanters?
OMT eliminated the vertical-axis centrifugal separator from its continuous cycle as early as the start of the 2000s, so for over 20 years. Over the last ten years this evolution has continued with the new two-phase decanters that work without adding water, using the TBD twin-bowl technology. Dynamic filtering, on the other hand, is the most recent innovation, introduced in the last two olive harvests to support contract-processing millers who have chosen to work without a vertical separator.
Why has OMT eliminated the final centrifugal separator?
Eliminating the final vertical-axis separator from the continuous cycle brings two concrete benefits: a shorter process (both in economic terms and in processing time) and less heating of the final product. The reduced heating translates into a higher polyphenol content and a greater ability for the oil to keep over time.
Is the EURO X2.0 EVOO decanter an exclusive OMT technology?
Yes. The EURO X2.0 EVOO centrifugal extractor is built to an original, exclusive OMT design. It works in two phases without adding mixing water, avoids the oil losses in the pomace typical of similar systems, and is equipped with an inverter on the main motor to reduce current draw during start-up. It reduces the need for process water to zero litres.
Are OMT systems mindful of the sustainability of the process?
Yes. OMT's technological choices (two-phase decanters with no added water, elimination of the final separator, water-free dynamic filtering, inverters on the main motors, modular GENESIS malaxers) reduce the consumption of process water, electricity draw and the volume of waste to be disposed of, in line with the theme of plant sustainability.
Choosing the system
How do you choose the right system for your business?
The choice depends on the quantity of olives to be processed per hour, the annual volume, the type of activity (farm or contract processing), the available space and the budget. OMT offers pre-sales consultancy to size the system on the basis of the real hourly capacity required and the customer's logistical and economic needs.
Which system do you recommend for a small farm?
For small farms, the reference solutions are Pegaso 250 (250 kg/h, ideal for small batches) and Pegaso 500 (500 kg/h, for larger production). Neither requires masonry, plumbing or electrical works for installation, and both deliver product quality comparable to larger-sized systems.
Which system do you recommend for contract processing?
For contract processing, OMT offers complete systems with Euro decanters: Euro X15 DE (1,500 kg/h), Euro 2.0 EVOO (2,000 kg/h) and Euro X30 (3,000 kg/h). Pegaso 1000 (1,000 kg/h) is a solution suited both to farms and to small-scale contract processing. All the larger solutions are modular in the malaxing and crushing stages.
Is a blade, hammer or roller crusher better?
It depends on the processing objective. OMT produces all three types: the blade crusher (in particular the SFR/A model) is the most widespread modern choice for organoleptic quality and energy efficiency; the hammer crusher is suited to other types of processing; the roller crusher to traditional-profile production. All models can be matched with OMT farm systems.
Can I get pre-sales advice to choose the system?
Yes. The OMT sales team offers dedicated technical and commercial advice to correctly size the system. Can you achieve both high production capacity and high oil quality together?
Quantity and quality are two fundamental objectives of the olive oil process, but within the production cycle they do not necessarily go in the same direction. The experienced miller looks for a compromise between the two, and this is precisely why OMT designs modular, configurable and adjustable systems: so that the operator can choose to prioritise quality, quantity or a balance between the two, depending on the result they want to achieve.
Does a more powerful machine automatically guarantee a better oil?
No. Power in excess of the actual production capacity does not always have a positive impact on oil quality, and it leads to disproportionate energy consumption. OMT designs systems with installed power suited to the production capacity, in line with millers' growing attention to energy costs. The goal is a balance between hourly capacity, consumption and final product quality, not over-sizing.

How do you request a quote for an OMT system?
Quotes are requested via the Contact form on the website www.omtspa.it, by writing to info@omtspa.it or by contacting the sales representative Giacomo Cappugi directly (+39 328 831 9139). To provide an accurate quote, OMT typically asks for: the desired hourly capacity, annual volumes, location (Italy or abroad), any logistical and space constraints, and whether or not installation is required.
Are indicative system prices published?
OMT does not publish price lists on the website. Each system is configured on the basis of the customer's needs, and a dedicated quote is drawn up for that configuration. The price depends on the hourly capacity, the components chosen (number of malaxers, type of crusher, presence of a dynamic filter, level of the VM 4.0 electrical panel), any installation and the delivery destination.
What are the delivery times for a system?
Delivery times depend on the model, the requested configuration, the time of year and the production workload. This is information confirmed on a case-by-case basis when quoting: to obtain it, you need to contact the sales department.
Is system installation included in the quote?
It depends on the requested configuration. OMT can handle installation both in Italy and abroad, or supply the system so that it is installed by the customer or by a technician they trust. The arrangement (with or without installation, with or without technical supervision) is defined when quoting.
International and deliveries
Does OMT also deliver and install abroad?
Yes. OMT has installations in all the countries of the Mediterranean Basin (Morocco, Tunisia, Algeria, Turkey, Syria, Iran, Lebanon, Greece, Spain, Portugal) and in many non-European countries: Australia, New Zealand, Peru, Chile, South Africa, Mexico and California. Delivery and installation conditions are defined when quoting.
Does OMT work with international customers on a tailor-made basis?
Yes. Most of OMT's output has always been aimed at foreign countries. Systems can be configured with electrical voltages and frequencies specific to the destination country (e.g. 380V/60Hz/3-phase) and adapted to local logistical constraints (space, accessibility, infrastructure). The olive is a fruit that varies from country to country, cultivar, size, harvest calendars, and OMT's modular machines adapt to these differences.
Does OMT offer on-site training for foreign customers?
During installation and testing, OMT can arrange a period of technical training for the customer's staff, with the aim of transferring the skills needed to run and routinely maintain the system. The arrangements are defined when quoting.
After-sales and spare parts
How do you request spare parts for an OMT system?
Original OMT spare parts are requested by e-mail to info@omtspa.it, indicating where possible: the model and serial number of the machine, the year of manufacture, the part code or reference, and a photo of the nameplate or component. The technical team prepares the original spare part or ships the identified part.
Does OMT also support historic OMT/Toscano machines?
Yes. OMT can also support historic machines branded Officine Meccaniche Toscane / Toscano / Toscana, as well as pumps and separators sold decades ago. It helps to provide a photo of the identification nameplate, the year of purchase and, if available, the historic customer reference, to make it easier to identify the part.
Does OMT offer technical assistance and service?
Yes. OMT provides a technical assistance service for its systems, with the possibility of intervention during the olive harvest and remote support for diagnosing problems on decanters, electrical panels, malaxers and pumps.
Are user manuals and diagrams available for OMT machines?
Yes. The basic technical documentation (user manuals, wiring diagrams, exploded views with spare-part references) is supplied with the system. For historic machines or additional copies, you can request them at info@omtspa.it, indicating the model and serial number.
Used and reconditioned
Does OMT sell used or reconditioned systems?
OMT specialises in the production of new systems, but in some cases the availability of used or reconditioned machines can be considered, at the customer's request and depending on the period. For requests of this kind it is best to write directly to info@omtspa.it, describing the desired hourly capacity and the size of the business.
Training and consultancy
Does OMT organise courses for millers and mill technicians?
Yes. OMT periodically organises training courses for millers and mill technicians, in Italy and abroad, to pass on skills in the olive-processing process (extraction, crushing-malaxing, clarification) and in running its systems.
Is it possible to arrange a company visit to the OMT facilities?
Yes. You can arrange a visit to the OMT facilities in Bagno a Ripoli (Florence) for an in-depth presentation of the system range, to see the machines in production and to define the most suitable configuration. The visit is arranged by writing to info@omtspa.it or by contacting your sales representative.
Can I apply for open positions at OMT?

Oil quality
What does the quality of extra virgin olive oil depend on?
The quality of extra virgin olive oil depends on two main factors: (1) the quality of the olives (cultivar, agronomic techniques, harvesting method and timing, post-harvest management) and (2) the quality of the processing (the quality of the machines, the technological choices, the operator's skill). The olive grower acts on the first factor; the choice of system acts directly on the second.
Is the system alone enough to guarantee the quality of the oil?
No. The olive oil system is one of the essential elements for obtaining an excellent oil, but it is not the only one. Three conditions are needed, working together: (1) excellent agricultural raw material to start with (olives harvested at the right degree of ripeness and at the right time); (2) an experienced operator, able to read the variables of the process; (3) a modular, configurable system that allows the operator to work in different ways depending on the result they want to achieve. OMT machines are designed precisely to give the operator flexibility.
How do OMT systems affect the quality of the oil?
OMT's technological choices, two-phase decanters with no added water, elimination of the final separator, the integrated SFR/A + GENESIS crushing-malaxing system, TBD processing with a full bowl in the absence of oxygen, and low-speed dynamic filtering, all combine to raise the polyphenol content, reduce peroxides, limit the heating of the product and keep the organoleptic characteristics intact.
Is this an extraction process or a transformation process?
OMT defines it as a transformation process, not simply extraction. By varying the components of the process, for the same product processed, very different results can be obtained in terms of the chemical and organoleptic quality of the oil. For this reason the choice of machines and how they are combined is just as decisive as the quality of the olives you start with.

Pegaso 250
For what size of business is the Pegaso 250 system designed?
Pegaso 250 is the continuous-cycle system dedicated to small farms, with a production capacity of 250 kg/h of olives. It is designed for those who want performance and oil quality comparable to larger-sized systems, but in reduced dimensions and capacity and with a smaller investment.
Does Pegaso 250 work in two or three phases?
Pegaso 250 works in two phases without a final vertical-axis separator. It uses very small volumes of low-temperature mixing water. Two-phase processing helps preserve the polyphenols in the oil and reduces the environmental impact of the process, because they are not diluted in the vegetation water.
Are masonry, plumbing or electrical works needed to install Pegaso 250?
No. Thanks to the system's compactness and modularity, no masonry, plumbing or electrical works are needed for installation. Pegaso 250 is designed to be positioned and connected quickly in confined spaces, a feature particularly suited to small farms.
What components make up the Pegaso 250 system?
The system includes: a feed hopper with feeding elevator and defoliation, a Pegaso 250-500 hydropneumatic washing machine, a GENESIS crusher-malaxer (SFR/A blade crusher integrated with a malaxing tank of about 200 kg), a Pegaso 250 decanter (horizontal two-phase centrifugal extractor) and a control electrical panel.
What are the technical specifications of the Pegaso 250 decanter?
The Pegaso 250 decanter has a production capacity of 250 kg/h, installed power of 3 kW, a bowl inner diameter of 200 mm and a bowl length of 850 mm. It is a horizontal-axis centrifugal extractor that works in two phases without a final separator, with a patented oil-collection system that ensures a clean oil at the outlet, free of impurities.
Can the dynamic filter be integrated into the Pegaso 250 system?
Yes. Pegaso 250 can be combined with the new dynamic filtering system to clarify the oil leaving the decanter, replacing the classic vertical-axis centrifugal separators. The filter works at low speed, without process water, and requires no masonry drains.
Pegaso 500
For what size of business is Pegaso 500 designed?
Pegaso 500 is dedicated to small farms producing larger volumes than Pegaso 250. According to OMT, it is the only small-sized system that delivers performance and product quality comparable to that of the new higher-capacity systems, with a production capacity of 500 kg/h of olives.
What are the innovations of Pegaso 500 compared with a traditional system?
Pegaso 500 works in two phases without a final vertical-axis separator and with very small volumes of low-temperature mixing water. It is equipped with the GENESIS crusher-malaxer (SFR/A crusher + modular malaxing tanks) and with a two-phase decanter featuring an inverter-controlled start-up system that reduces electricity draw.
What are the technical specifications of the Pegaso 500 decanter?
The Pegaso 500 decanter has a production capacity of 500 kg/h, installed power of 4 kW, a bowl inner diameter of 200 mm and a bowl length of 1,050 mm. It is a two-phase decanter that uses a special central collection system inside the bowl to ensure efficient extraction.
What type of malaxing does Pegaso 500 use?
Pegaso 500 is equipped with the GENESIS crusher-malaxer with a capacity of about 200 kg, integrated with the blade crusher. An additional second GENESIS malaxer ensures the feeding of the decanter, maintaining continuity in the paste flow and improving the overall efficiency of the system.
Does Pegaso 500 require major installation works?
No. Thanks to its compactness and modularity, no masonry, plumbing or electrical works are needed for installation, exactly as for Pegaso 250. The system can be positioned and connected in confined spaces with short installation times.
Is Pegaso 500 suitable for contract processing?
OMT classifies Pegaso 500 mainly as a system for farms. For higher-intensity contract processing, OMT offers Pegaso 1000 (1,000 kg/h) or Pegaso 1500 (1,500 kg/h), the Euro X2.0 decanter (2,000 kg/h) and the Euro X30 decanter (3,000 kg/h).

For what size of business is Pegaso 1000 designed?
Pegaso 1000 is the ideal solution for medium-sized farms and for contract-processing operations aiming to increase the quality and performance of their olive oil production. It delivers quality and performance comparable to higher-capacity systems, with a production capacity of about 1,000 kg/h of olives.
What is the TBD decanter used in Pegaso 1000?
TBD - Twin Bowl Decanter is a new-generation twin-bowl decanter. The paste travels along the entire length of the bowl, increasing the residence time, and the extracted oil is drawn off thanks to a second bowl located at the centre: through this reverse path, mucilage and suspended solids are removed. The result is a final oil of the very highest quality.
What are the technical specifications of the Pegaso 1000 decanter?
The Pegaso 1000 decanter has a production capacity of 1,000 kg/h, installed power of 7.5 kW, a bowl inner diameter of 255 mm and a bowl length of 1,255 mm. It works in two phases without adding mixing water and without a final vertical-axis separator, thanks to the design of the scroll and the patented oil-collection system.
Does Pegaso 1000 work without mixing water?
Yes. The Pegaso 1000 TBD decanter works in two phases without adding mixing water. This shortens the process, keeps the product cooler and helps raise the polyphenol content in the oil, with a resulting increase in the product's keeping ability.
What components does the Pegaso 1000 system include?
Pegaso 1000 includes: a hopper elevator with defoliation, a Pegaso 1000 hydropneumatic washing machine (1,500-2,000 kg/h), an SFR/A thermo-conditioning crusher, a GENESIS 2-tank malaxer unit, a Pegaso 1000 decanter with TBD technology and a control electrical panel.
Can Pegaso 1000 be integrated with the dynamic filter?

Is the electrical panel customised for each system?

Does the electrical panel allow control of the malaxing temperature?
Yes. The electrical panel controls the circulation of heating water in the cavities of the GENESIS tanks and makes it possible to set a different malaxing temperature for each individual tank.
