It is the ideal installation for small farms because it guarantees performance and olive oil quality comparable to those of the higher operating capacity installations built by Officine Meccaniche Toscane. The technology and materials make PEGASO 250 an installation with professional features but reduced in size and production capacity. It is a two-phase operating system that produces olive oil without using vertical-axis separators.
The use of small volumes of low-temperature mixing water is one of the main features. Thanks to the compactness and modularity, no masonry, water and electrical works are necessary for the installation.

Equipped with a new Genesis crusher-kneader
The installation is equipped with the new GENESIS crusher-kneader with a capacity of approximately 200 kg. The crusher, equipped with knife breaking parts, is integrated into the crusher-kneader and, thanks to innovative mixing blades, guarantees efficient continuous processing. This installation is featured by the use of very small volumes of low-temperature mixing water.
Pegaso 250 decanter
Pegaso 250 decanter is the ideal solution for small farms that aim to achieve performance and oil quality comparable to that of larger capacity installations. It is a horizontal axis centrifugal extractor operating in two phases that produces oil without using vertical axis final separators.
New dynamic filtering system
This system can be combined with the innovative technology of clarifying the product coming out from the decanter with the dynamic filter. This new device replaces the classic vertical axis separators. The dynamic filter works at a low rpm to prevent overheating and safeguard the oil temperature; it also works without addition or contact with water, so as not to alter the chemical properties of the oil and keep its quality. No masonry exhaust system is needed.
